It magnifies the traditional Apulian dishes – perfect pairing with legume, crudités and salads, excellent with stews and roasts.
Cultivar: 100% native and ancient CORATINA variety of the PUGLIA region. Olive groves owned by the Rubino Family for generations, over about 100 hectares, raised by a polyconic vase growing system – plant age over 100 years.
Harvesting area: to the south of the Puglia’s country seat there is a small town called Sannicandro di Bari from the medieval origins first influenced by the Normans then the Swabians, the territory surrounded by beautiful olive groves – leading product of this area.
Preservation: store at a temperature between 12° and 18°C in a cool and dry place, away from light and heat. Shard and long-lasting drops in temperature can cause the wax crystallisation naturally occurring in extra virgin olive oil and lead to oil freezing with the formation of small white floating spheres – such phenomenon does not affect the oil quality.
Appearance: green oil with iridescent gold reflections depending on the bottling time.
Taste: spicy, yet with pleasantly bitterish finish due to the high content of polyphenols (antioxidants) – this cultivar contains the highest amount than any other – scent of artichoke, fennel, dill and chicory.
